Quick Dumpling and Spinach Soup

Ingredients:

  • 1 tablespoon olive oil (or butter)

  • 2-3 carrots, peeled and chopped

  • 3-4 cloves garlic, minced

  • 4-5 cups chicken or vegetable broth

  • 1 package Luda's Dumplings (your choice of flavor)

  • 1 cup fresh spinach

  • 2-3 scallions, thinly sliced

  • Salt and pepper to taste

  • Other spices to your liking (paprika, Italian seasoning, etc.)

Instructions:

Heat olive oil in a large pot over medium heat. Add chopped carrots and garlic. Cook, stirring occasionally for 3-5 minutes, until they start to soften and become fragrant.

Pour in broth and bring to a boil.

Stir in Luda's Dumplings , spinach, and scallions. Return to a boil.

Reduce heat to a simmer and cook for 3-5 minutes, or until the dumplings are cooked through (they'll float to the top).

Season with salt, pepper, and any other spices you like. Taste and adjust seasonings as needed. Ladle into bowls and enjoy hot!

Tips:

Stir in a handful of fresh herbs like dill or parsley at the end.

For a more decadent soup, stir in a splash of heavy cream or a dollop of sour cream just before serving.
